A typical Champagne aperitif, this ratafia is a mixture of unfermented grape juice (our rebêches of Pinot Noir) and alcohol (wine distillate) which naturally blocks alcoholic fermentation and retains all the aromatic potential of the grapes without adding sulphites or another curator.
Harvested at the end of the 2019 harvest, an early and hot year, the grapes showed exceptional maturity. A hue, naturally pink on pressing, gave way to this amber aspect after 3 years in 228-litre oak barrels. This Ratafia Champenois reveals notes of prunes, cherries in brandy, with a sweet, round and suave mouth.
This natural product is unfiltered and a slight deposit or cloudiness may appear without affecting its quality.
